Ich bin ein großer Blumenkohl-Fan. Dieses Gemüse ist so unglaublich wandelbar. Ich habe daraus schon "Steaks" gemacht, die berühmten "Buffalo Wings" sind inzwischen wohl jedem Hipster-Veganer ein Begriff (ich habe die übrigens noch nicht nachgekocht, werde ich aber noch), er schmeckt pur als Beilage, eignet sich für Cremesuppen, schmeckt super geröstet im Wok usw. usf.
Ganz wunderbar eignet er sich auch als Basis für Pasta-Saucen. Heute zeige ich euch zwei tolle Varianten, eine cremige "Sahne"-Sauce mit veganem Schinken und eine Bolognese mit Blumenkohl und Walnüssen. Übrigens auch ein erprobtes Mittel, das gesunde Kohlgemüse Kindern unterzuschmuggeln ;-) Wobei mein Sohn interessanterweise ausgerechnet Blumenkohl total gerne isst. Aber es soll ja auch Kinder (und sogar Erwachsene) geben, die zu Blumenkohl ein ähnlich abneigendes Verhältnis haben, wie ich zu Rosenkohl. Vielleicht lassen sie sich ja von diesen Rezepten überzeugen, ihm nochmal eine Chance auf dem Tellerchen zu geben.
Blumenkohl-Walnuss-Bolognese
Zutaten:
250 g Blumenkohl
150 g Walnüsse
1 Knoblauchzehe
1 Zwiebel
1 Bund Suppengemüse, ohne Petersilie
2 El Tomatenmark
2 Dosen gehackte Tomaten
250 ml Gemüsebrühe
1 Spritzer Balsamico
1 Prise Rohrohrzucker
gehackte italienische Kräuter, optional
3 El Olivenöl
300 g Pasta nach Wahl
Zubereitung:
Blumenkohl, Walnüsse, Zwiebel, Knoblauch und Suppengemüse (ggf. nacheinander) in der Küchenmaschine fein "schreddern".
Olivenöl in einer tiefen Pfanne erhitzen. Den fein gehackten Gemüsemix darin bei mittlerer Hitze anbraten, bis er rundherum eine Bräunung angenommen hat und Röstaromen entstanden sind. Tomatenmark einrühren und kurz anschwitzen.
Mit Gemüsebrühe und den Tomaten ablöschen. Balsamico und Zucker zufügen. Ggf. Kräuter einrühren. Bei geschlossenem Deckel und mittlerer Hitze ca. 30 Min. köcheln lassen.
In der Zwischenzeit Pasta wie gewohnt kochen. Pasta abgießen und mit der Sauce anrichten.
Pasta mit "Schinken-Sahne"-Sauce
Zutaten:
300 g Blumenkohl
1 Knoblauchzehe (optional)
1 Zwiebel
3 Tl Cashew- oder Mandelmus
1-2 El Hefeflocken
Salz, Pfeffer
5-6 Scheiben veganer Schinken (z.B. von Dennree)
300 g Pasta nach Wahl, z.B. kurze Maccheroni
Zubereitung:
Blumenkohl in Röschen teilen. Zwiebel und Knoblauch grob hacken. In etwas leicht gesalzenem Wasser kochen, bis der Blumenkohl gar ist. Er sollte nicht mehr zu bissfest sein. Abgießen, Kochwasser auffangen.
Blumenkohl, Zwiebel und Knoblauch unter Zugabe von etwas Kochwasser im Mixer pürieren. Nussmuss und Hefeflocken zufügen. Nach und nach weiter Kochwasser beim Mixen zugießen, bis die gewünschte Saucenkonsistenz erreicht ist. Mit Salz und Pfeffer abschmecken.
Pasta wie gewohnt kochen. Schinken in Streifen oder Würfel schneiden. Pasta mit Schinken und Sauce vermengen und auf Tellern anrichten.
